So I'm stacking shield block value/rating gears. Am I doing it wrong?  I mean all I'm nabbing from the raids are gears with SBV or SBR, ignoring Parry, Dodge, Defense, Hit and Expertise. I'm also avoiding stacking Stamina, not like I can stack 24 Stamina gems when I'm covered in SBV/SBR gears, they tend to have low Stamina and Defense, leaving me at 28.5k HP unbuffed and 540 defense.

You should be trying to evenly spread your mitigation as best as possible due to diminishing returns on blocks/dodges/parries.

Personally I'd rather stack Block for just that mitigation. I mean 38.27% to reduce 1617 damage should be better than a few more percent on avoidance right. And it's not like I have bad avoidance either, if you'd look me up on armory, I have 21.17% dodge and 16.24% parry, before diminishing returns. Also I simply don't see the reason of stacking stamina gems since I'm already at 28.7k HP unbuffed. But I'm having doubts if I'm heading the right way because all (I emphasize all) the Protection Warrior tanks I see just stack those two, stamina and avoidance.

Avoidance is better then mitigation, purely because avoidance = no damage at all, mitigation still takes damage. So they stack Stam to take the hit if their avoidance fails.
Though I'm not that sure on the specifics on warrior gearing; all I know is I have to aim for more avoidance as a protadin because I get block rate from a skill. ^^;

Stack absolutely no SBR SBV at all.
Then short yourself points in shield spec to afford deep wounds.
Then go to the Tanking role forums and page a bitch post about how awesome paladins are and how their block mechanics are so much better.
Thats the way to do it.
Anyway look, Block is:
Awesome for heroics. Great for farm content. Good on fast hitting, light hitting bosses. Absolutely great for threat
Now, for any PROGRESSIONAL situation where a boss hits you ZOMGHARD! that block is nothing, its all about effective health, which is a fancy term for "Have health (stamina) and then have ways of keeping that health from being lost (armor, avoidance, and to a tiny extent - block)
This is the very reason, druids are getting hit so hard with the 3.1 nerf. Because in progression content, stamina and effective health is the LAW, and since druids are the BEST at STAMINA they are therefore automatically dubbed, thee best progressional tank. And, as GC said, its hard to balance encounters around four tanks, when one of them obliterates other 3 at effective health.
Anyway. Young tank.
Once you have a workable amount of expertise, hit. And once you have plenty of defense and don't have to worry about defense anymore, then you shall follow the same path, and switch things to 24 stam gems and switch enchants to EH enchants. If your hurting for something, you can always do
Expertise/Stam purple gem, in red sockets Defense / Stam in yellow sockets 24 stam in blue sockets

Ya. Is garbage really; people show up for naxx night but not sarth.
Well, I opened up guild repairs for sarth+3 nights. Attendance got a lot better. I mean, we went like 4x in one week.

Hey Ryoko I've been thinking of using my block gears for full time PvP so I thought of coming up with a EH set and I already had a some of these stuff lying around in my bank. This is what I can have for both BV and EH set, was wondering if you could check them out and maybe comment on which one I should be on to make the healer's life easier. The site seemed to factored in Shield Mastery but not talents like Toughness and Vitality. I also have Mining which comes with a 50 stamina benefit which wasn't factored in as well.
