It's not implemented yet, but in the job update it'll be:
Merchant: Able to carry more goods, have faster transports (This will be updated even later). I also believe they have more defence against thiefs and maybe more attack.
Hunter: More attack vs thiefs, supposedly they also get a faster horse, but I doubt it.
Thief: Able to carry more goods, faster transports (I think), more attack vs transports, hunter and merchants.
