Making a poster, don't have illustrator, how do I make it so I don't have to have some ridiculously large canvas on photoshop to work with but the poster doesn't pixelate?

I don't think it's possible in PS, without using a canvas the actual size.

Nah, with illy you can create the shapes you want to have, and later on increase their size without pixelating them. With PS they'll pixelate no matter what.

Illy. (:
Maybe google a bit. Also, don't forget that, when you want to print something, you always have to use the CMYK colour set, instead of RGB. RGB, when printed, comes out in different colours then on the screen.

Keep in Mind using The pantone matching system for color choices too, to really avoid having a diff color come out when you print. Dunno how professional of a print you're doing but yea. 16 feet is serious, but that sounds awesome at the same time. Maybe you can break it up into sections, that way making it easier on Photoshop? Its just tough designing and not being able to see everything at once. just a thought though.
